Vegeable Wheat Bonda



                                          Vegetable Wheat Bonda 


Ingredients:

Wheat Flour        -   1 cup
Onion                   -    3 nos
Cabbage              -     100 gm
Carrot                  -      1
Green Chillies     -     3 nos
Curry leaves        -    10 nos ( Cut into small pieces)
Garam Masala     -   1 tspn
Water
Oil for frying
Salt to taste


Process:


1. In a vessel, add wheat flour, onion, cabbage, carrot, green chillies, curry leaves, garam masala, salt and mix everything well



2. Add water little by little and make a thick batter. 



3. Heat oil in a kadai and make sure that the oil is not over heated.  



4. Drop the batter into the oil by taking a small portion of it. This won’t come in exact round shape, so don’t worry about the shape.


 5. Fry the bondas well until they become golden brown. 




  6. Take the Bondas from the kadai, and serve hot.  Healthy and delicious evening snack.  



Fish Curry



                                Fish Curry (Meen Kozhambu)

Ingredients:


Fish                -   10 - 15 nos ( Use turmeric and salt to clean)
Small Onion   -   150 gms
Tomato           -   6 nos
Tamarind        - 100 gms ( Soak for 20 mins and take tamarind extract)
Sambar podi   -  6 tspns ( if you use chilly powder add 3-4 tspn and adjust according to taste)
Fennel Seeds  -  1 tspn ( make it a coarse powder)
Vadagam         -  1 tspn
Curry Leaves
Oil
Water
Mustard Seeds
Salt to taste

 

Process:


1. In a kadai, add oil. Once the oil is heated, add mustard seeds and let it to splutter. Then add onion and curry leaves. Saute the onion until it turns golden brown. 




2. Then add tomatoes and sauté until the whole thing becomes a paste.




3. Once the tomatoes turns into a paste, pour the tamarind extract, sambar podi and salt. Add some more water to the kadai and mix everything properly. Allow the curry to boil for 20mins in medium flame. 


  
4. Add  fish into the curry and let it to boil for 10 mins. 



5. After 10 mins, add coarse fennel seeds and curry leaves to it. 





6. Then in a pan add oil, vadagam  and sauté for a minute. 




7. Pour this vadagam into the curry and let it boil for 5 more minutes and turn off the flame.  


8. Now the fish curry is ready to serve.




Fish Fry

                                     Fish Fry ( Meen Varuval)

Ingredients:

 

Fish  -  10 nos ( use turmeric and salt to clean)
Sambar podi   -  2 tspn  ( If you use chilly powder add 1 tspn or 1 ½ tspn)
Chicken 65 masala  -  ½ tspn ( it adds the taste)
Water
Salt to taste
Oil
  

Process:

 

1. In a vessel add fish, sambar podi, chicken 65 masala, salt and very little amount of water. Mix them well.  Marinate everything for 20 mins.



2. In a tawa ( don’t use non-stick tawa),  add 5 tspn of oil to it. Once the oil gets heated, add the fish into it and cover with the lid.



 3. Once the fish turns into golden brown, fry the other side of the fish by covering the tawa with the lid.




4.Now the Fish is ready to serve.

Egg and Tomato Gravy

                                Egg and Tomato Gravy

Ingredients:

Onion         -   2 large size
Tomato       -   8 nos
Garlic         -   2 whole garlic
Eggs            -    4 nos
Sambar podi   -   2 tspn  (if you use chilly powder add 1 tspn and adjust to taste).
Oil               -   3 tspn
Mustard seeds
Fennel seeds
Curry leaves
Salt to taste
Water

Process:

1.  Add oil to the kadai.



2. Once the oil gets heated add mustard seeds and fennel seeds.




3. Then add curry leaves and garlic to the kadai. Add onion and sauté until the onion turn golden brown. 




4. Then add tomato and cook until the tomato becomes a paste like consistency.  



5. Then add sambar podi, salt, water to the kadai and let it to boil for 15 – 20 mins.




6. Once the gravy becomes thick break and add the eggs. Cover the lid and let it cook for 5 mins. 

 


7. Turn the eggs to other side and let it to cook for another 5 mins. 



8. Turn off the gas and serve. This goes well with rice.
